Recipe for Salmon Salad Fajitas (wraps or tortilla)
A fun and unique way to eat a great tasting healthy meal this simple salmon salad recipe combines a host of flavors with fun preparation.
1 can wild salmon (drained)
¼ cup plain yogurt
¼ tsp chili powder
1 grated carrot
1 chopped green onion
1 diced tomato
1 avocado. Cut into small chunks
¼ cup chopped cilantro
Salt and pepper
Flour tortillas (white or whole wheat)
Combine the canned salmon with the mayonnaise, chili powder and yogurt. Add green onion, avocado, tomato and onion and coriander (cilantro). Add salt and pepper to taste and gently stir.
Warm tortillas lightly in oven. Once warmed remove the tortilla and add the salmon salad mixture into the center. Roll up the tortilla, fold the ends and enjoy.
